Here is my recipe with instructions for my Swiss Apple French Omelette. Total time, including prep time, is about 3 minutes so you'll be working fast. Don't get distracted.
This recipe is for one lady's size serving. Double it for a man's size serving.
Read this recipe all the way through. If you are adding filling to your omelette, prepare this first and have it ready because when the egg goes into the pan things will happen really fast. There will be no time to reference the recipe or cut up filling ingredients at that time. Also if you choose to use different filling ingredients, please don't add meat or lots of add-ins to this omelette. If that is what you want, find a recipe for a Country or Western Omelette instead. French Omelettes are meant to be light.
I use a 8" medium size metal pan for the lady size and a 10" large size metal pan for the man size.
Okay, here we go.
Ingredients:
One large egg
1 T. butter
Small amount Swiss cheese, cut into small thin bits
Small amount your favorite apple variety, cut into small thin bits
Directions:
Break an egg into a cup or small bowl, beat it lightly with a fork. Do not use a whisk or a beater as that puts too much air into the egg.
Put butter in a pan over medium heat (I find that between 6 and 7 is best on my stove).
The pan is ready when the butter begins to sizzle. Immediately pour the beaten egg into the pan. With your fork, pull the egg to the edges of the pan so that the egg covers the bottom of the pan. Things are happening really fast now.
Immediately scatter your filling ingredients on top of the egg. Cover for 30 seconds.
Remove cover. Slide spatula around the edge of the egg, flip half of the omelette over the rest. Cover for 15 seconds. Covering the egg helps it to plump. Do not let the edges burn.
It is done. Turn out on to a plate. Garnish and enjoy.
